  • 2 medium Onions Chopped finely
  • 8 oz Mushrooms Fresh button or cremini
  • 3 cloves Garlic Minced
  • 4 cups Beef Broth Low-sodium preferred
  • 1 cup Sour Cream Full-fat for richness
  • 1/4 cup Flour All-purpose
  • 2 tbsp Paprika Regular or smoked
  • 1 tsp Salt Adjust according to taste
  • 1/2 tsp Pepper Adjust according to taste
  • 3 cups Cooked Egg Noodles or Rice Base for serving

  • 1 tbsp Worcestershire Sauce Adds depth

Instructions

Preparation Steps

  • Finely chop the onions and garlic, then slice the mushrooms.
  • In a skillet over medium heat, sear the beef chuck roast until it's beautifully browned on all sides.
  • Transfer the seared beef into the slow cooker. Add in the chopped onions, sliced mushrooms, minced garlic, beef broth, flour, paprika, salt, and pepper. Stir to combine.
  • Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, mix in the sour cream until fully blended.
  • Ladle the stew over egg noodles or rice and garnish with fresh parsley.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat gently on low in the slow cooker or in a saucepan with a splash of beef broth if necessary.
