  • to taste Salt Essential seasoning to enhance the overall taste of the beef.
  • to taste Pepper Essential seasoning to enhance the overall taste of the beef.

For the Filling

  • 2 cups Fresh Spinach Provides vibrant color and flavor; sauté briefly to enhance its taste.
  • 0.5 cups Sun-Dried Tomatoes Adds a tangy burst; opt for those packed in oil for extra richness.
  • 1 cup Feta Cheese Crumbled for creaminess; fresh feta has the best texture for this recipe.
  • 2 cloves Garlic Fresh cloves provide depth and aroma, elevating the flavor profile.
  • 1 tablespoon Olive Oil Enhances overall flavor; use a good quality oil for best results.

Instructions

Preparation

  • In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Toss in fresh spinach and cook until wilted, then mix in chopped sun-dried tomatoes and crumbled feta for a delicious, creamy filling.
  • Preheat your oven to 375°F (190°C) so it's hot and ready when the tenderloin is prepped, ensuring even cooking throughout.
  • Carefully slice the beef tenderloin lengthwise to create a pocket. Season generously with salt and pepper, then fill this pocket with the savory spinach mixture, making sure it's well-distributed.
  • Using kitchen twine, tie the tenderloin securely, preventing the delicious filling from spilling out during cooking.
  • In a heated skillet, add a little olive oil and sear each side of the tenderloin for 3-4 minutes until it’s golden brown.
  • Transfer the seared tenderloin to a baking sheet and pop it in the oven. Bake for 25-30 minutes or until it reaches an internal temperature of 145°F (63°C) for medium-rare meat.
  • Garnish with fresh herbs like parsley for a pop of color and extra flavor.

Notes

For best results, allow the beef to rest for at least 10 minutes after baking. This helps keep the meat juicy.
