Ingredients

For the Salad

  • 1 head Romaine Lettuce chopped
  • 1 pint Cherry Tomatoes halved
  • 1 large Cucumber sliced
  • 1/2 medium Red Onion finely chopped, soaked in water
  • 1 cup Feta Cheese crumbled
  • 1/2 cup Kalamata Olives pitted

For the Dressing

  • 1/4 cup Olive Oil extra virgin
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Pepper

Instructions

Preparation

  • Wash and chop the romaine lettuce into bite-sized pieces, halve the cherry tomatoes, slice the cucumbers, and finely chop the red onion.
  • In a large mixing bowl, gently toss together all the prepped vegetables with crumbled feta cheese and Kalamata olives.
  • In a small bowl, whisk together extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper until the dressing is well combined.
  • Pour the vinaigrette over the salad mixture and gently toss everything together for about 30 seconds.
  • Serve immediately or chill in the fridge for 30 minutes before serving.

Notes

For optional garnish, add fresh herbs like parsley. Dress just before serving to maintain crispness.
