Ingredients

For Thickening the Glaze

  • 2 tablespoons Cornstarch Mixed with water for slurry.
  • 2 tablespoons Water For cornstarch slurry.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper. Pat the boneless skinless chicken breasts dry with a paper towel.
  • In a saucepan over medium heat, combine fresh cranberries, lime juice, brown sugar, soy sauce, and garlic powder. Cook for about 10 minutes until the cranberries burst.
  • Stir in the cornstarch slurry while continuously mixing and allow to cook until the glaze thickens.
  • Place the seasoned chicken in the baking dish, brush half of the glaze over it, and bake for 25-30 minutes.
  • About 5 minutes before done, pour the remaining glaze over the chicken.
  • Optional: Garnish with chopped cilantro before serving.
