  • Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking pan for easy removal.
  • Melt the butter and half of the chocolate chips in a microwave-safe bowl until smooth; cool slightly.
  • Whisk together flour, cocoa powder, salt, granulated sugar, and brown sugar in a separate bowl.
  • Stir in eggs one at a time into the melted chocolate mixture, then add peppermint extract.
  • Fold the dry ingredients into the chocolate mixture gently.
  • Incorporate the remaining chocolate chips, then pour into the prepared baking pan.
  • Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs. Allow to cool for 15 minutes.
