How to Make Crispy Crunchy Parmesan Crusted Zucchini Fries

  • Preheat the oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper.
  • Wash and cut the zucchinis into uniform fry shapes, around 1/4 inch thick.
  • Whisk the eggs in a bowl until frothy and combine panko breadcrumbs, grated Parmesan, garlic powder, salt, and pepper in another bowl.
  • Dip each zucchini fry into the egg mixture, then coat with panko-Parmesan blend.
  • Arrange the coated fries on the lined baking sheet in a single layer, leaving space between each fry.
  • Bake for 20-25 minutes, checking for a golden brown color and crispy texture.
