Ingredients

For the Base

  • 1 cup Diced Onions can substitute with shallots
  • 1 lb Ground Meat can substitute with ground turkey, chicken, or beans
  • 3 cloves Minced Garlic or use garlic powder

For the Spices

  • 2 tbsp Chili Powder adjust for heat preference

For the Pasta

  • 2 cups Elbow Macaroni can use other pasta shapes

For the Liquids

  • 4 cups Beef Broth or vegetable broth
  • 1 can Diced Tomatoes with juice

For the Creamy Finish

  • 2 cups Shredded Cheddar Cheese can substitute with Monterey Jack
  • 1 cup Sour Cream optional, can use Greek yogurt

Instructions

Cooking Instructions

  • Heat a large pot over medium heat. Add diced onions and ground meat; cook until the meat is browned and onions turn translucent, about 5-7 minutes.
  • Stir in minced garlic and chili powder; sauté for 1 minute until fragrant.
  • Add beef broth, diced tomatoes (with juice), and elbow macaroni; stir to combine well.
  • Bring the mixture to a boil, then reduce the heat, cover, and simmer for 10-12 minutes until the macaroni is al dente.
  • Remove the pot from heat, then stir in shredded cheddar until fully melted and creamy.
  • Spoon the chili mac into bowls while hot, topping with optional sour cream if desired.
