Ingredients

For the Vegetables

  • 4 medium Carrots Fresh and vibrant.
  • 4 medium Potatoes Yukon Gold, chopped into large chunks.

For the Broth

  • 4 cups Beef Broth Low-sodium recommended.
  • 4 cloves Garlic Fresh, minced.

For the Herbs

  • 1 teaspoon Thyme Fresh.
  • 1 teaspoon Rosemary Fresh.

Instructions

Steps

  • Preheat your oven to 300°F (150°C).
  • In your Dutch oven, heat olive oil over medium-high until shimmering. Season the chuck roast with salt and pepper, then sear each side for about 4-5 minutes until golden brown.
  • Remove the roast and sauté onions and garlic in the same pot for approximately 3 minutes until fragrant.
  • Add carrots and potatoes, stirring gently.
  • Pour in 1 cup of beef broth, scraping the bottom to deglaze.
  • Reintroduce the roast, sprinkle thyme and rosemary, then add enough broth to cover the meat halfway.
  • Cover and cook for 3-4 hours, checking for fork-tenderness.
  • Let the roast rest for 15 minutes before slicing and serving.
