How to Make Cozy Comforting Leftover Turkey Pot Pie

  • Preheat oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  • Sauté onions in a skillet with oil over medium heat for 5 minutes until soft and translucent.
  • Add garlic to the pan and cook for 1 minute, then stir in the frozen mixed vegetables.
  • Pour in the chicken broth and heavy cream, simmer for 3-4 minutes until slightly thickened.
  • Fold in seasoned turkey along with thyme and sage, let bubble for about 1 minute.
