Ingredients

For the Bread

  • 2 slices Sourdough or Whole Grain Bread Provides a chewy texture and rich flavor.

For the Filling

  • 1 cup Vegan Cheese Look for brands that melt beautifully.
  • 1 tablespoon Fresh Basil Finely chopped.
  • 1 tablespoon Fresh Parsley Finely chopped.
  • 1 tablespoon Fresh Dill Finely chopped.
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Lemon Juice
  • 1 cup Spinach or Kale Finely chopped.

For Frying

  • 1 tablespoon Avocado Oil or Vegan Butter For frying.

Instructions

Preparation

  • Combine your chosen vegan cheese, finely chopped basil, parsley, dill, garlic powder, lemon juice, salt, and pepper in a mixing bowl. Mix until creamy and set aside.
  • Gently fold in the finely chopped spinach or kale into your filling.
  • Spread the green goddess filling evenly on one side of each slice of bread.
  • Preheat a non-stick skillet over medium heat and drizzle with avocado oil or add a pat of vegan butter.
  • Place one slice of bread filled side up onto the pan. Top with another slice, filled side down, and cook until golden brown, about 3-4 minutes per side.
  • Once crispy and golden brown, remove from the pan, let cool slightly, slice in half, and enjoy while warm.
