How to Make Irresistible Savory Curried Veggie Lattice Pot Pie

  • Preheat your oven to 400°F (200°C). Roll out your dough until it's about 1/8-inch thick and set aside.
  • In a large skillet, heat olive oil over medium heat. Add finely chopped onions and freshly minced garlic, and sauté until translucent, about 3-4 minutes.
  • Toss in curry powder, stirring to coat the onions and garlic. Then add the mixed vegetables and cook for 5-7 minutes until vibrant yet tender.
  • Pour in coconut milk and vegetable broth, and gently simmer for 5-7 minutes until slightly thickened.
  • Transfer the vegetable mixture into a pie dish lined with dough. Top with another layer of dough cut into strips for a lattice effect.
  • Bake for 30-35 minutes until the top is golden brown and crispy.
  • Serve hot, optionally with a sprinkle of fresh cilantro.

Notes

For best results, prep ingredients first and check the dough thickness to ensure a flaky crust.
