  • 1 whole Chicken Ensure it's fully thawed before marinating

  • 1 cup Cranberry Sauce Can be swapped for fresh or frozen cranberries
  • 1/2 cup Maple Syrup Honey can be used as an alternative
  • 4 cloves Minced Garlic Use fresh for best flavor
  • 2 tablespoons Chopped Rosemary Thyme can be a substitute
  • 1 teaspoon Salt Adjust to taste

Instructions

Cooking Instructions

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine cranberry sauce, maple syrup, minced garlic, chopped rosemary, salt, pepper, and lemon zest. Mix until smooth.
  • Rinse the whole chicken, pat it dry, and rub the skin with olive oil.
  • Pour half of the marinade inside the chicken cavity and coat the exterior with the remaining marinade.
  • Place the chicken breast side up in a roasting pan. Roast for about 1 hour and 20 minutes, basting every 30 minutes.
  • Allow the chicken to rest for 15 minutes before carving, then serve.
