For the Roll-Ups

  • 4 tortillas Tortillas opt for gluten-free tortillas if needed
  • 8 oz Cream Cheese or use hummus for a different taste
  • 1 Red Bell Pepper sliced into thin strips
  • 1 Cucumber sliced into thin strips
  • 1 cup Carrots shredded finely
  • 2 cups Spinach Leaves as a base layer

For Serving

  • 1 cup Dipping Sauce like hummus or ranch dressing

Preparation

  • Wash all fresh veggies thoroughly.
  • Slice the red bell pepper and cucumber into thin strips.
  • Shred the carrots finely.
  • Spread a generous layer of cream cheese evenly on each tortilla.
  • Lay down a row of spinach leaves along the cream cheese, followed by the bell pepper strips, cucumber, and shredded carrots.
  • Roll the tortilla tightly from one end to the other.
  • Slice the roll-up into bite-sized pieces, about 1 inch thick.
