  • 1 can Coconut Milk Full-fat for best results
  • 1 cup Vegetable Broth Low-sodium recommended

  • 2 tablespoons Brown Sugar Adjust to taste
  • 1/2 teaspoon Salt Use sparingly

Instructions

Prep steps

  • Gather all your ingredients. If using fresh pineapple, peel and chop it into bite-sized pieces.
  • Rinse the jasmine rice under cold water until the water runs clear.

Cooking

  • In a medium pot over medium heat, mix the rinsed rice, coconut milk, vegetable broth, brown sugar, and salt. Stir well.
  • Gently fold in the chopped pineapple.
  • Bring the mixture to a boil, then lower the heat and cover. Let it simmer for about 15-20 minutes until the liquid is absorbed.
  • Once cooked, let it sit covered for an additional 5 minutes, then fluff the rice gently with a fork. Garnish with cilantro if desired.

Notes

For added crunch, sprinkle with toasted coconut before serving. Store leftovers in the fridge for up to 3 days, or freeze for up to 2 months.
