  • 1 pound Boneless, Skinless Chicken Breasts
  • 2 cans White Beans Canned for quick prep
  • 1 medium Onion Diced finely
  • 3 cloves Garlic Minced fresh
  • 4 cups Chicken Broth Low-sodium recommended
  • 2 teaspoons Cumin Essential spice
  • 1/4 cup Lime Juice Freshly squeezed
  • 1/4 cup Cilantro Chopped, adjust to taste

  • Start by dicing the onion and mincing the garlic. Chop some fresh cilantro for garnish, and have your other ingredients ready at hand.
  • Layer the boneless, skinless chicken breasts at the bottom of your slow cooker. Then, add in the creamy white beans, diced onion, minced garlic, cumin, and pour over the chicken broth.
  • Squeeze fresh lime juice over the mixture, then season with salt and pepper to enhance the flavors.
  • Cover the slow cooker and cook on low heat for 6-8 hours or on high for 3-4 hours.
  • Once ready, use two forks to shred the chicken directly in the pot and stir to combine flavors.
  • Taste-test the chili to adjust lime or seasonings as needed; garnish with cilantro and add sour cream or Greek yogurt before serving.
