Preparation

  • Start by gathering and chopping your onions, garlic, and mushrooms. Warm the broth on another burner.
  • Heat olive oil in a large pan over medium heat. Sauté the onions until translucent, about 3-5 minutes, then add minced garlic, cooking for an additional 30 seconds.
  • Stir in your choice of mushrooms and cook until soft and golden, around 5 minutes.
  • Add the Arborio rice, stirring until coated with oil and slightly toasted, about 1-2 minutes.
  • Pour in the white wine if using, stirring until it's mostly evaporated.
  • Gradually add the warm broth, one ladle at a time, stirring frequently until each addition is absorbed, about 18-20 minutes.
  • When the broth is nearly absorbed, mix in the shrimp and cook until they turn pink, around 2-3 minutes.
  • Remove from heat, stir in butter and grated Parmesan cheese. Adjust seasoning to taste before serving.
  • Garnish with extra Parmesan and fresh herbs like parsley if desired.
