Instructions

Cooking Directions

  • Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic, sautéing for about 3-4 minutes until the onions are translucent and aromatic.
  • Add chopped carrots and celery to the pot. Sauté these vegetables for around 5 minutes, stirring occasionally, until they soften and release their natural sweetness.
  • Pour in the vegetable broth and bring to a rolling boil. Once boiling, reduce the heat and let it simmer for about 10 minutes, allowing the flavors to meld beautifully.
  • Stir in the orzo pasta and diced tomatoes. Cook on low heat for approximately 8-10 minutes, stirring occasionally, until the orzo is al dente and perfectly tender.
  • Fold in the fresh spinach and dried oregano, cooking until the spinach wilts down, which should take about 2-3 minutes.
  • Finish by removing the pot from heat and stirring in the fresh lemon juice. Serve the soup hot, optionally garnished with grated Parmesan cheese.
