Preparation

  • Preheat the Oven: Set your oven to 400°F (200°C).
  • Cook the Chicken: Sauté diced chicken in a skillet over medium heat for 7-10 minutes until golden brown and cooked through; then allow to cool completely.
  • Prepare the Filling: In a mixing bowl, combine the cooled chicken, cranberries, chopped pecans, mayonnaise, Greek yogurt, green onions, lemon juice, salt, and pepper. Mix thoroughly.
  • Assemble Pastries: Roll out the puff pastry and cut it into squares, placing about 2 tablespoons of the filling in the center.
  • Fill and Bake: Fold over the pastry to form a pocket and seal edges with a fork. Bake for 20-25 minutes until golden brown.
