Ingredients

For the Filling

  • 2 cups diced rotisserie chicken
  • 1 cup dried cranberries
  • 1 cup chopped pecans
  • 1/2 cup mayonnaise can replace with Greek yogurt
  • 1/2 cup Greek yogurt
  • 3 tablespoons chopped green onions
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper

  • 1 sheet puff pastry

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Dice the chicken into bite-sized pieces and cook in a skillet over medium heat until golden brown, about 7-10 minutes.
  • Cool the chicken slightly, then mix with cranberries, pecans, mayonnaise (or Greek yogurt), green onions, lemon juice, salt, and pepper.
  • Roll out the puff pastry on a floured surface and cut into 4x4 inch squares.
  • Fill each pastry square with about two tablespoons of chicken salad mixture, placing it in the center.
  • Bake on a parchment-lined baking sheet for 20-25 minutes until golden and puffy.
