Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Clean the sweet potatoes and bake them for 45-60 minutes until fork-tender.
  • Once baked, cool the sweet potatoes for about 10 minutes, slice them in half, and scoop out the flesh.
  • In a mixing bowl, combine the sweet potato flesh with butter, sour cream, half of the cheddar cheese, salt, pepper, and optional cinnamon; mash until creamy.
  • Refill the potato skins with the creamy filling and top with remaining cheddar cheese.
  • Bake for another 15-20 minutes until the tops are golden and cheese is bubbling.
  • Garnish with chopped green onions before serving.
