Ingredients

For the Shortbread Base

  • 1 cup Unsalted Butter Can substitute with salted butter, adjust salt accordingly.
  • 1/2 cup Granulated Sugar

For the Caramel Layer

  • 1/2 cup Corn Syrup Maple syrup can be a substitute.
  • 1 can Sweetened Condensed Milk Evaporated milk with extra sugar can be an alternative.

For the Raspberry Layer

  • 1 cup Fresh Raspberries Frozen raspberries can be used, thawed and drained.

For the Chocolate Topping

  • 1 cup Dark Chocolate Chips Milk chocolate can be substituted for a sweeter flavor.

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy. Gradually add all-purpose flour and mix until crumbly. Press firmly into a lined baking dish.
  • Bake for 20 minutes, or until the edges turn golden brown. Allow to cool slightly.
  • In a saucepan over medium heat, combine butter, corn syrup, and sweetened condensed milk. Stir constantly for 8-10 minutes until thickened into a smooth caramel.
  • Let the caramel cool for a few minutes, then layer fresh raspberries evenly over the caramel.
  • Melt dark chocolate chips in the microwave, heating in 30-second intervals until smooth. Pour over the raspberry layer.
  • Refrigerate for at least 2 hours to set. Slice into squares and serve.

Notes

Optional: Sprinkle a pinch of sea salt on top before chilling for added flavor.
