Ingredients

For the Shortbread Base

  • 1 cup Unsalted Butter softened
  • 1/2 cup Granulated Sugar
  • 1/4 cup Brown Sugar
  • 2 cups All-Purpose Flour sifted
  • 1/4 teaspoon Sea Salt a pinch

For the Brownie Layer

  • 1/2 cup Unsalted Butter melted
  • 1/2 cup Cocoa Powder unsweetened
  • 3 large Eggs room temperature
  • 1 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract pure
  • 1 cup Chocolate Chips or Chunks dark or semi-sweet

For the Ganache Topping

  • 1/2 cup Heavy Cream
  • 1 cup Chocolate Chips or Chunks high-quality

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and line a baking pan with parchment paper.
  • In a bowl, cream the softened unsalted butter and granulated sugar until light and fluffy. Gradually add the sifted all-purpose flour and sea salt until crumbly. Press this mixture evenly into the bottom of the prepared pan.
  • Bake for 15-20 minutes or until the shortbread is lightly golden. Let it cool completely in the pan.
  • In a heatproof bowl, melt the unsalted butter and cocoa powder until smooth.
  • Stir in the granulated sugar and brown sugar until well combined. Add the eggs one at a time, mixing thoroughly after each addition. Finish by stirring in the vanilla extract, sifted flour, and chocolate chips until just combined.
  • Pour the brownie batter over the cooled shortbread crust and bake for 25-30 minutes. Check doneness with a toothpick.
  • Heat heavy cream until just simmering, pour over chopped chocolate and let sit for a minute. Stir until smooth and glossy.
  • Once the brownies are cooled completely, spread the ganache evenly over the top and let it set.

Notes

Optional: Sprinkle with a touch of sea salt on top for an added flavor twist. Keep bars in an airtight container at room temperature for up to five days to maintain freshness.
