Instructions

Cooking Steps

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes. Then, add minced garlic and sauté until fragrant.
  • Stir in chopped carrots and celery. Soften the mixture for 5-7 minutes, ensuring they remain tender and colorful.
  • Add diced zucchini and canned tomatoes with their juices. Mix gently until everything is combined.
  • Add vegetable broth, then season with dried herbs, salt, and pepper. Increase heat to boil, then lower to simmer for about 20 minutes.
  • Add rinsed chickpeas, followed by spinach or kale in the last 5 minutes of cooking. Stir until the greens wilt.
  • Just before serving, squeeze fresh lemon juice into the soup to brighten the flavors.
  • Ladle hot soup into bowls, sprinkle with Parmesan cheese if desired, and enjoy with loved ones.
