Ingredients

For the Cauliflower

  • 1 head Cauliflower Cut into florets
  • 2 tablespoons Olive Oil For roasting

For the Seasoning

  • 1 tablespoon Chili Powder Preferably smoked
  • 1 teaspoon Garlic Powder Or fresh garlic
  • to taste Salt
  • to taste Pepper

For the Fresh Touch

  • 2 tablespoons Lime Juice Freshly squeezed
  • 1/4 cup Cilantro Chopped, for garnish

For the Creamy Finish

  • 1/2 cup Queso Fresco or Feta Cheese Or plant-based cheese
  • 1 cup Avocado Cream Sauce Made from avocados and lime juice

Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the cauliflower into bite-sized florets.
  • In a large bowl, combine the cauliflower florets with olive oil, chili powder, garlic powder, salt, and pepper. Toss until fully coated.
  • Spread the seasoned cauliflower evenly on a lined baking sheet. Roast for 25-30 minutes.
  • Once roasted, remove from oven and squeeze fresh lime juice over it.
  • In a blender, combine ripe avocados with lime juice, salt, pepper, and a splash of water. Blend until smooth and creamy.
  • Drizzle avocado sauce over cauliflower, then sprinkle with queso fresco or feta cheese and cilantro. Serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10-15 minutes.
