Preparation Steps

  • In a large mixing bowl, combine Greek yogurt, fresh lemon juice, minced garlic, dried oregano, salt, and pepper.
  • Add the boneless, skinless chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  • Preheat your grill or skillet to medium heat. Cook the marinated chicken for 6-7 minutes on each side until golden brown.
  • In a small bowl, mix grated cucumber, more Greek yogurt, minced garlic, fresh lemon juice, dill, salt, and pepper for the tzatziki sauce.
  • Start with a base of cooked rice or quinoa in each bowl. Layer sliced chicken on top, followed by diced cucumbers, halved cherry tomatoes, and red onion.
  • Drizzle olive oil over the assembled bowls and serve with warm pita bread.
