  • 1 package Tortellini Fresh or frozen

For the Sauce

  • 1 cup Heavy Cream Consider half-and-half for a lighter finish
  • 2 cloves Garlic Minced
  • 1/2 cup Parmesan Cheese Freshly grated
  • 2 tablespoons Olive Oil Extra-virgin
  • to taste Salt
  • to taste Pepper

For the Vegetables

  • 2 medium Sweet Potatoes Peeled and diced
  • 4 cups Fresh Spinach Washed

  • Peel and dice sweet potatoes into small cubes. In a skillet, heat olive oil over medium heat and sauté until tender and caramelized, which typically takes about 10-12 minutes.
  • Move the sweet potatoes to the side of the skillet, then add minced garlic to the other side. Sauté until fragrant, usually around 30 seconds.
  • Stir in the tortellini and pour in the vegetable broth. Simmer gently until the tortellini is cooked through, which should take about 5-7 minutes.
  • Lower the heat slightly and add the heavy cream along with the grated parmesan. Stir continuously until everything is combined, melted, and creamy.
  • Add in the fresh spinach and season with salt and pepper. Stir just until the spinach is wilted, which should take about 2-3 minutes.
  • Give everything a gentle toss and serve immediately.
