Ingredients

For the Filling

  • 1 lb Ground Turkey Can be substituted with ground chicken or beef
  • 1 medium Onion Diced
  • 2 medium Carrots Diced
  • 1 cup Frozen Peas No thawing required
  • 2-3 cloves Garlic Minced
  • 1 cup Chicken Broth Use low-sodium
  • 1 tsp Dried Thyme

For the Mashed Potato Topping

  • 2 lbs Potatoes Russets are best, peeled and chopped
  • 4 tbsp Butter Unsalted
  • 0.5 cup Milk Adjust for creaminess

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, add a splash of olive oil and sauté the diced onion and carrots over medium heat until softened and caramelized, about 5-7 minutes.
  • Crumble the ground turkey into the skillet. Cook until browned and broken apart, about 5-7 minutes.
  • Add minced garlic, dried thyme, salt, and pepper. Cook until fragrant, about 1 minute.
  • Pour in chicken broth and let it simmer until thickened. Fold in frozen peas.
  • In a pot of salted water, boil peeled potatoes until tender, about 15-20 minutes. Drain and mash with butter and milk until creamy.
  • In a baking dish, layer the turkey mixture first, then spread creamy mashed potatoes on top.
  • Bake for 25-30 minutes, until the mashed potatoes are golden brown and bubbly.

Notes

This dish can be made ahead and refrigerated for up to a day before baking. Leftovers can be stored in an airtight container for up to 3 days.
