Ingredients

For the Filling

  • 1 lb Ground Beef or substitute with ground turkey or black beans
  • 1 medium Onion chopped
  • 1 can Canned Diced Tomatoes fire-roasted for extra flavor
  • 1 cup Sweet Corn frozen or canned varieties

For the Topping

  • 1 box Jiffy Corn Muffin Mix
  • 1 cup Shredded Cheese blend of Cheddar and Monterey Jack
  • 2 large Eggs
  • 1/2 cup Milk whole milk preferred

For the Spices

  • 2 tbsp Chili Powder
  • 1 tsp Cumin

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and grease a 9×13 inch baking dish.
  • Sauté the chopped onion in a skillet over medium heat for about 4-5 minutes until translucent.
  • Brown the ground beef in the skillet with the onions until no longer pink, then stir in the diced tomatoes, sweet corn, chili powder, cumin, salt, and pepper. Allow to simmer for 10 minutes.
  • Mix the Jiffy corn muffin mix with the eggs and milk in a separate bowl until just combined.
  • Layer the seasoned beef mixture in the prepared baking dish, then pour the cornbread batter on top.
  • Bake in the preheated oven for 20-25 minutes until golden brown.
  • Cool for a few minutes before serving.

Notes

Top with fresh cilantro for added flavor. Leftovers can be stored in an airtight container for up to three days. Reheat at 350°F for best results.
