Ingredients

For the Pasta Base

  • 8 ounces rotini pasta or any pasta shape

For the Vegetables

  • 1 cup cherry tomatoes chopped
  • 1 cup cucumber chopped, English preferred
  • 1 cup bell peppers red and yellow, chopped
  • 1/2 cup red onion thinly sliced

For Extra Flavor

  • 1/2 cup black olives sliced
  • 1/4 cup fresh parsley chopped

For the Dressing

  • 1/2 cup Italian or Southwest dressing to taste

  • Boil salted water in a large pot, add rotini pasta, and cook until al dente, about 8 minutes. Drain and let cool slightly.
  • Chop the cherry tomatoes, cucumbers, bell peppers, and red onion into bite-sized pieces.
  • In a large mixing bowl, combine the cooled pasta with all the chopped veggies.
  • Mix in sliced black olives and pour your choice of dressing over the salad. Toss to coat evenly.
  • Sprinkle chopped parsley on top for added flavor and color.
  • Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled.

Notes

Optional: Add crumbled feta cheese on top for an extra creamy touch.
