Ingredients

For the Pasta

  • 8 ounces Pasta of Choice Fettuccine or penne recommended

For the Sauce

  • 1 pound Large Shrimp Fresh or thawed
  • 2 tablespoons Olive Oil Extra virgin recommended
  • 3 cloves Fresh Garlic Minced
  • 14.5 ounces Canned Diced Tomatoes In juice
  • 1 cup Heavy Cream
  • 1 cup Fresh Basil Leaves Torn before adding
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Cooking Instructions

  • Bring a large pot of salted water to a rolling boil. Cook your pasta until al dente according to the package instructions, usually around 8-10 minutes. Drain and set aside, keeping it hot!
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the seasoned shrimp and sauté for 3-4 minutes on each side until they are a gorgeous pink and opaque.
  • Lower the heat and stir in the minced garlic. Sauté for about 30 seconds, being careful not to let it burn.
  • Pour in the canned diced tomatoes and heavy cream. Stir and let it simmer gently for about 5 minutes.
  • Tear the fresh basil leaves and sprinkle them into the sauce.
  • Toss the hot pasta in the skillet with the shrimp and creamy sauce until well coated. Serve immediately.

Notes

Optional: Sprinkle with grated Parmesan cheese before serving for an added depth of flavor. Store leftovers in an airtight container for up to 3 days. Freeze portions for up to 2 months. Reheat gently to maintain shrimp tenderness.
