Equipment

  • Large pot

Ingredients

For the Soup Base

  • 1 pound Boneless, Skinless Chicken Breasts Substitute with turkey or beans for a vegetarian option.
  • 3 cloves Fresh Garlic Choose firm cloves for best results.
  • 1 can Canned Diced Tomatoes Go for seasoned varieties to enhance the taste.
  • 1 can Canned Black Beans Rinsed before adding.
  • 2 medium Bell Peppers A mix of vibrant varieties is recommended.
  • 4 cups Chicken Broth Homemade is preferred, but store-bought works too.
  • 2 tablespoons Taco Seasoning A key ingredient for flavor.

For the Garnish

  • 1/4 cup Fresh Cilantro Chopped finely before serving.

Instructions

Main Steps

  • In a large pot, heat olive oil over medium heat. Add the boneless, skinless chicken breasts and cook until golden brown, about 5 minutes on each side.
  • Mince the fresh garlic cloves and toss them into the pot. Sauté until fragrant, around 30 seconds.
  • Chop the bell peppers into bite-sized pieces and add them to the pot, along with the canned diced tomatoes. Stir everything until well combined.
  • Add the chicken broth and rinsed black beans into the pot. Bring the mixture to a gentle boil, then reduce heat and let simmer for about 10 minutes.
  • Sprinkle in the taco seasoning, allowing the soup to simmer for an additional 15 minutes.
  • Shred the chicken within the pot using two forks until tender. Stir well and garnish with fresh cilantro before serving.

Notes

Serve with tortilla chips or a dollop of sour cream for added flavor. If you have leftovers, store in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
